Hello Wild Capture family!
Western Colorado is the land that we belong to, not the land that belongs to us. Our mission is to produce wine that is a raw expression of the land that we are from. We believe the best process to achieve this is minimal intervention in the cellar. The truest expression is one where the natural qualities of the fruit are intervened with as least as possible. In the cellar no additives and no processing aids are used. We have confidence in the natural fruit so there is no need to manipulate it.
Using the natural microflora will ensure that our beverages are consistently unique. We believe in this style of beverage because it represents a certain time and place. The natural microflora is particular, individual and can not be found anywhere else! Wild capture will be wildly capturing yeast from the local air and that is why we are called Wild Capture.
